Ingredients
  1. 4 8-inch flour tortillas
  2. Butter spray
  3. 2 Teaspoons Grande Southwest seasoning (or to taste)
  4. 1 Cup grated Monterey Jack or cheddar cheese
  5. 1 4-ounce can green chiles drained (or to taste)
  6. 1 2 1/4-ounce can sliced ripe olives drained
  7. 1 Cup chopped chicken or beef (optional)
Instructions
  1. Spray one side of four tortillas with butter spray. Sprinkle with 2 teaspoon Grande Southwest seasoning. On a baking sheet arrange two of the tortillas spice side down. Top with cheese, chiles, olives and chicken or beef. Top with remaining two tortillas, spice side up.
  2. Grill, broil or pan fry until tortillas are slightly brown and the cheese is melted. Cut in wedges and serve with salsa, guacamole, sour cream or your favorite condiment.

Ingredients
  1. 2 Cups frozen corn kernels thawed, or 2 cans kernel corn drained
  2. 1 15-ounce can cream style corn
  3. 1 Pound ground turkey
  4. 1 Medium onion diced
  5. 2 Cloves garlic, finely minced
  6. 2 Tablespoons Grande Southwest seasoning
  7. 1 Chipotle chili, canned in adobo sauce
  8. 1/2 Cup light white wine
  9. 2 Cups chicken stock
  10. 3 Tablespoons canola oil
  11. 1 Cup heavy cream
  12. 1 28-ounce can Fire Roasted Tomatoes
Instructions
  1. Heat stockpot on medium high heat, and add the oil. Sautee the onions and garlic till translucent and slightly browned. (5-8 minutes). Turn down heat and add wine, scraping the browned bits from pot. Turn heat back up to medium high. Add the ground turkey, and cook through, breaking up larger hunks. Add the chipotle chili and stir to incorporate. Add chicken stock, tomatoes and corn kernels. Allow to simmer for approximately10 minutes. Add the creamed corn, the cream, one at a time, and stir to incorporate. Bring to a boil, stirring constantly, so that the cream does not separate.

Ingredients
  1. 1 Teaspoon canola oil
  2. 2 Tablespoons Instant Gourmet Grande Southwest seasoning, divided
  3. 1/2 Teaspoon black pepper, divided
  4. 2 Pounds pork tenderloin, trimmed and cut into 1 inch pieces
  5. 2 Cups onion, chopped
  6. 2 Tablespoons jalapeno peppers, chopped and seeded (about 1)
  7. 1/2 Cup dry white wine
  8. 3 Cups chicken stock
  9. 2 Teaspoons dried oregano
  10. 1 Teaspoon ground cumin
  11. 2 Cups tomatillo green chile salsa
  12. 1/2 Cup fresh cilantro, chopped
  13. Lime wedge, for garnish
Instructions
  1. Heat oil in large Dutch oven over medium-high heat. Sprinkle 1 tablespoon Instant Gourmet Grande Southwest seasoning and 1/2 teaspoon black pepper over pork tenderloin. Place pork in pan and cook 8 minutes, or until browned. Remove pork from pan.
  2. Add oinion, garlic and jalapeno pepper to pan and saute for 5 minutes. Return pork to pan. Deglaze pan by adding dry white wine and scraping up any browned bits. Add remaining 1 tablespoon Instant Gourmet Grande Southwest seasoning, 1/2 teaspoon black pepper, chicken stock, oregano, cumin and tomatillo green chile salsa. Bring to boil, cover and cook for 15 minutes. Right before serving, stir in cilantro and garnish with lime wedges. Serve with crispy tortilla chips.

Ingredients
  1. 1/2 cup Lime Jalapeño Fajita Bath Brine Concentrate
  2. 1/4 cup Merlot, Blackstone
  3. 1/4 cup water
  4. 1 pound skirt steak
  5. 2 whole bell peppers, one red and one green, seeded and sliced
  6. 1 tablespoon canola oil
  7. 1 package Manny's Chi Chi's Tortillas
  8. Corn and Black Bean Salad
  9. zest and juice of 2 limes
  10. 1 cup cilantro, chopped
  11. 1 teaspoon Instant Gourmet Grande Southwest Seasoning
  12. 1/4 cup canola oil
  13. 1 can Black Beans, drained
  14. 1 can Whole Kernel Corn, drained
Instructions
  1. In a glass bowl, mix Fajita Bath with wine and water; combine well. Place skirt steak in a zip top bag with marinade, removing air while sealing bag. Marinate in the refrigerator for at least 30 minutes (can be left to marinate overnight).
  2. Heat grill or grill pan to high heat. Remove steak from marinade, shake off excess liquid and discard leftover marinade. Grill steak for three minutes on each side for medium rare. Remove and allow steak to rest for 5-7 minutes.
  3. Meanwhile, heat a skillet over medium high heat for two minutes; add canola oil and swirl to coat. Add onion and peppers; sauté three to five minutes, until soft. Slice steak on the diagonal into thin slices and serve on warm tortillas with peppers, onion and any combination of optional toppings.
Optional Toppings
  1. Shredded Mexican Mix Cheese
  2. Sour Cream
  3. Plum Tomato Salsa
  4. Chopped lettuce
  5. Corn and Black Bean Salad
  6. In a mixing bowl, mix lime juice, zest and seasoning until well combined. Vigorously whisk in canola oil. Add corn, black beans and cilantro; toss to combine well and serve.

Ingredients
  1. 2 lbs. boneless chuck
  2. 1 Onion chopped
  3. 4 Garlic cloves, diced

Add low-sodium chicken broth to desired consistency. Simmer uncovered for at least 4 hours, stirring often. Refrigerate overnight. Serve as desired with grated cheese, chopped onions, beans or pasta.
