Ingredients

1 lb ground turkey
1 packet Middle Eastern Za’atar
3 tbsp Extra Virgin Olive Oil
10 oz Castelvetrano olives, pitted and smashed
3 cups cooked rice
3 cups stripped and chopped kale
1 lemon zested & juiced
feta and dill for garnish

Directions

Heat oil in pot to medium-high
Add ground turkey and cook until slightly crispy (about 5 minutes).
Add olives and mix into meat, breaking up the turkey into bite sized pieces (about 2 minutes)
Add Kale and lemon juice and cook until wilted (about 3 minutes), stirring occasionally.
Add 1 packet of Middle Eastern Za’atar
Add rice and lemon zest, and mix thoroughly.
Remove from heat, plate and garnish with chopped dill and feta cheese as desired.
