Ingredients

4 cups Shredded Chicken (leftovers or Rotisserie,if available to save time)
1 onion, diced
1 tbsp olive oil
2 cloves of garlic, minced
29 ounces of Chicken Broth
3 tbsp Grande Southwest
7 oz diced green chilies (canned or fresh)
8 oz cream cheese
3 cans cannellini beans
2 cups corn
2 tbsp chopped cilantro
(Optional) Fresh Lime Juice to taste

Optional when Served

Tortilla Chips
Mexican Cheese
Sliced Avocado

Directions

Heat Olive oil in large pot over medium heat. Add onion, sauté for 3 minutes or until clear. Add garlic and sauté until fragrant (30 seconds)
Add broth, green chile, & Grande Southwest. Heat to a boil, then reduce heat and simmer for 15 minutes.
While simmering, drain and rinse all 3 cans of beans. Set 1 can aside to be blended with the cream cheese.
Take ⅓ cup of soup, add to blender with 1 cup of beans and 8 oz cream cheese. Blend until nearly smooth.
Add blended mixture, corn and rest of beans to soup, and stir well. Simmer for 5-10 more minutes.
Stir in chicken, and cilantro. Add lime juice to taste (usually 1 lime).
Serve with chips, avocado slices, and extra cheese.
